The Non-Alcoholic genre has seen some incredible steps forward in recent times, we are finally a long way past Claytons. For the NON non-alc wines, William Wade (ex Chef at NOMA) and Aaron Trotman, from Melbourne, have come together to create a truly unique offering.
For the NON 3 they gave the wine a base of Barossa Semillon Verjus, they have then worked with a Tea Sommelier to invest in some of the highest quality teas on the planet. The fruit is sourced from renowned Japanese growers and delivers this intense yet balanced citrus profile which sings next to the earthy, brown spice notes of the toasted cinnamon. This may be sans alcohol but it's by all means a very serious drink.
