The Non-Alcoholic genre has seen some incredible steps forward in recent times, we are finally a long way past Claytons. For the NON non-alc wines, William Wade (ex Chef at NOMA) and Aaron Trotman, from Melbourne, have come together to create a truly unique offering.
For the lightly sparkling NON 1 they gave the wine a base of Barossa Semillon Verjus, they have then worked with a Tea Sommelier to find the highest quality Chamomile for the tea component. The fruit is sourced from the most renowned Raspberry growing region in New Zealand and delivers this incredibly bright and clean profile to the wine. This may be sans alcohol but it's by all means a very serious drink.
