Ultra-sensitive agricultural star Jerome Guichard has done it again with this Gamay grown on limestone soils in Macon. This was slowly pressed to tank where it began fermentation, then run to bottle to finish and disgorged a few months later. This is a pretty irresistible style with depth of fruit but plenty of fresh acidity too. Very food-friendly and full of personality.
