Hervé Souhaut needs little introduction. After converting the cellars of his wife's parents generations old hunting lodge into a winery, they begun working four parcels of vines in St. Joseph, in the Northern Rhone. Due to the elevation, ancient vineyard sites and southern exposures this is regarded as one of the finest grape growing regions in the world. They also work an additional 20 acres of Vin De Pays vineyards on the plateau, under the Domaine Romaneaux-Destezet name.

Starting in 1993, Hervé didn't take long before making a name for himself. With all of his wines now selling by allocation he produces around 3750 cases a year, and thats likely where it will stay. 

Hervé makes wines in a style that are ready to drink, which is not so much the norm of the Northern Rhone. Typically wines from the region are made with intense tannin, to be aged and to soften and develop over time. Hervé however prefers subtlety and finesse in his winemaking, and looks for the perfect balance between acid and tannin at bottling. His wines are simply pure and elegant. 

The 'Clos des Cessieux' is a plot of Syrah that his wife's grandfather gave a 25 year lease out on in 1988, which Hervé only got his hands back on therefore in 2013. Having been farmed inorganically, this plot has since been left to regenerate & due to its rocky terroir, he believes now its chemical free. Here is where Hervé's finesse in the cellar is truly noticed, as traditionally a Syrah from the region would be bold and brooding. Not without its regions traits, dark red fruits and savoury notes of bacon fat are definitely there, however they don't stand up to the vehement floral aromas.
