A blend of Viognier from the same block; Half picked early, with high acidity and low sugar & pressed straight to tank for cool fermentation to keep its freshness, the other half picked late after it had developed some apricot & paw paw notes and left on skins for 48 hours before pressing to tank. Both were then combined and aged in old oak barrels for 6 months.
Think of it as the best of both worlds - clean & crisp Viognier aromatics: orchard fruits, paw paw & ginger, together with some savoury phenolics and a fine acid backbone.
