Empirical Spirits of Copenhagen don't make gin, they don't make vodka, they don't make whiskey, they make spirits of intense flavour, they are a flavour company. To do this in the way that they saw as called for, they had to innovate like nothing else, they had to custom build machinery, develop hybrid fermentation techniques, augment low-temperature distillation and completely re-wire their brains from what they knew about making spirits. The source of inspiration for this absolute mountain of a task? Simply the ingredients. They have spent the years moving from corner of the earth to corner of the earth to find the flavours that want to work with and mate, it paid off.
