This wine was 100% whole bunch fermented under the veranda of the winery, wild yeasts, and left to simply do its thing. After fermentation finished it was pressed to old wood and it rested for 10 months there before bottling. The result is a wine of great poise and structure with aromas of black fruits a hint of pepper and spice. The palate shows freshness, good acidity, and length.
